Powdered milk for food storage: nonfat lasts, whole milk rotates

Quick answer
For long-term storage, buy nonfat dry milk. Utah State University Extension says nonfat dry milk suits short and long term emergency storage, while dried whole milk contains milk fat and is not suitable for long term storage. Nonfat keeps 3 to 5 years cool but as little as 3 months in heat, and about 3 months once opened. Hoosier Hill Farm's Instant Nonfat Dry Milk (2 lb, HHF535) and NOW's Organic Non-Fat Dry Milk (12 oz, 5832) are nonfat; Nido Fortificada is fortified whole milk powder for everyday use and short-term rotation.

Nonfat or whole milk powder
The fat is the problem. Utah State University Extension says nonfat dry milk (NFDM) suits both short and long term emergency food storage, while dried whole milk and dried buttermilk contain milk fat and are not suitable for long term storage. In USU's studies, stored milk powder failed because it developed an oxidized, stale flavor.
That makes the split simple: keep nonfat dry milk in long-term storage, and treat whole milk powder like NIDO as a pantry item you use and replace within its date. Nonfat milk also lacks vitamins A and D unless they are added, so USU suggests choosing a product that is instantized, extra grade and fortified with A and D for storage.
Three powdered milks compared
| Product | Type | Size | Mix |
|---|---|---|---|
| Hoosier Hill Farm HHF535 | Instant nonfat | 2 lb | 1 cup + 3 3/4 cups water = 1 qt |
| NOW 5832 | Organic nonfat | 12 oz | 3 tbsp = 8 oz milk |
| NIDO Fortificada | Fortified whole | 800 g | 1/4 cup + 1 cup warm water |
Figures are from Hoosier Hill Farm's, NOW's and Nestle's product pages.
How long powdered milk lasts
Temperature decides it. USU Extension puts the shelf life of packaged nonfat dry milk at 3 to 5 years in cool to cold storage and as little as 3 months in heat. In its research, milk held at 90°F began to develop off-flavors at 6 months and was unacceptable by 24 months; at 70°F, samples were rated unacceptable after 4 years; at 50°F, flavor barely changed over 52 months.
Vitamins hold up for about 6 months and decline only slightly by 18 months, USU says, with vitamin and flavor losses beyond several years. Once a container is opened, plan to use it within about 3 months and keep it away from light, moisture and heat. Store your milk in the coolest place you have, not a hot garage or attic.
Packing it for long-term storage
USU says dried milk must be kept free of moisture and oxygen. Mylar-type bags and #10 cans work for large amounts, and canning jars work for small amounts if light is kept out. Food-grade buckets and other plastic containers are less suitable on their own, and in one USU study, milk stored in ordinary plastic bags rated worse after 4 years than milk stored in cans.
Add oxygen absorbers to remove oxygen and limit off-flavors. If you buy bulk powder in a bag, like the Hoosier Hill Farm 2 lb or 25 lb, repack it into Mylar bags with absorbers, label each one with the date, and store it cool and dark.
Mixing and using it
Follow the ratio on the package. Hoosier Hill Farm says 1 cup of powder in 3 3/4 cups of cold water makes a quart; NOW says 3 tbsp makes 8 oz; NIDO says 1/4 cup in 1 cup of warm water. USU notes that instantized milk dissolves more readily, and non-instant powder may need blending or an overnight rest in the refrigerator.
Reconstituted nonfat milk will taste like fresh skim milk at best. USU suggests mixing it into fresh whole milk if the lack of fat bothers you, and Hoosier Hill Farm says mixed milk keeps 5 to 7 days in the refrigerator covered tightly. In an emergency, mix it with safe drinking water from your water storage.
Which one to buy
Choose the Hoosier Hill Farm 2 lb bag if you want nonfat milk in quantity to repack for storage. Choose NOW's 12 oz organic nonfat for baking and a small rotating supply. Choose NIDO Fortificada if your household drinks whole milk and you will use it up in normal rotation rather than store it for years.
