NESCO VS-12 Deluxe: what the settings do and where it stops

Quick answer

The NESCO VS-12 Deluxe (sold as VS-12P) is NESCO's most capable countertop sealer: a 130 W double vacuum pump rated at 25.1 inHg, Dry, Moist and Double seal settings, Normal or Gentle pressure, pulse vacuum, a canister hose port and built-in roll storage with a cutter. It takes bags up to 11.8 inches wide. Its manual limits it to one operating cycle every two minutes, so plan bulk sessions around that. Vacuum sealing extends shelf life but does not preserve food; keep perishables cold.

What the VS-12 Deluxe includes

NESCO lists these features for the VS-12P:

That is 19.7 feet of roll in the box (2 x 9.85), enough to make your first batch of custom-length bags. NESCO says the sealer works with any brand of vacuum sealer bags, up to 11.8 inches wide.

How to use each setting

The VS-12 manual explains the controls:

ControlUse it for
Dry sealDry bags and foods without moisture; shorter heat-sealing time
Moist sealWet bags or foods with a little moisture; longer heat-sealing time
Normal pressureRegular storage (the default)
Gentle pressureSoft or delicate items that need less vacuum
Pulse vacuumHold to vacuum, release to stop, then press Manual Seal
Manual SealSeal without vacuum, or stop vacuuming and seal immediately
Canister / hose portVacuum canisters through a hose; canisters sold separately

The progress display counts down the vacuum in seconds. When the light blinks, wait until it stays lit before the next operation.

The two-minute duty cycle

The manual states the appliance is not designed for continuous use and is approved for one operating cycle every two minutes. That caps a session at about 30 seals an hour (60 / 2). For a big freezer or pantry day, prep and label bags while the sealer rests rather than forcing back-to-back cycles.

Other manual tips that save bags:

Vacuum sealing is not preservation

Both NESCO and Utah State University Extension say the same thing plainly. NESCO's manual: vacuum packing extends the shelf life of foods but does not preserve them, and perishable foods belong in the freezer or refrigerator. USU Extension adds that if a food needed refrigeration or freezing before sealing, it must still be refrigerated or frozen, and that removing oxygen can increase the ability of botulism bacteria to grow.

For an emergency pantry, the VS-12 earns its place with dry goods. NESCO names flour, rice and pancake or cake mixes as items that stay fresh longer vacuum packed, and suggests sealing camping supplies such as matches and first aid kits to keep them clean and dry. Freezer meat and blanched vegetables also benefit, as long as they stay frozen.

VS-12 versus NESCO's other sealers

ModelPowerKey differences

NESCO lists an 11.8-inch maximum bag width for the VS-12, VS-09 and VS-C1, and says each model works with other brands of bags and rolls. Choose the VS-12 if you seal moist foods, want double seals and want rolls stored in the machine. Choose a smaller model if you only seal occasionally.
