FoodSaver food vacuum sealer: match the complete system

Quick answer

Choose a FoodSaver food vacuum sealer around the packages you will actually use. FM2000 handles heat-seal bags and rolls; its optional FA2000 handheld attachment connects by hose. Handheld+ combines a countertop sealer with a detachable cordless vacuum for compatible valve bags and containers. Cordless accessory vacuuming does not make the countertop heat-sealing operation cordless. Perishable food still requires refrigeration or freezing.

Choose the package before choosing the machine

Start with a meal you routinely portion. Freezer portions in sealed film need a bag-sealing workflow. A container you open repeatedly needs the appropriate vacuum valve and attachment. These are different jobs even when both packages carry the FoodSaver name.

For rolls, the countertop sealing strip closes a cut end to make a bag. After filling, the machine extracts air through the open end and seals it. For a vacuum zipper bag, you close its zipper first, then remove air through its valve with the compatible handheld attachment.

Check the exact bag instructions for freezer, refrigerator, pantry, reheating and cooking use. A valve, a zipper or an airtight appearance does not establish all of those permissions. Choose the appliance and consumables together, rather than discovering afterward that the supplied bags suit a different storage job.

FM2000: countertop bags with a separate accessory path

The current FM2000 page documents an automatic Vacuum and Seal button, a separate Seal button and an Easy-Lock latch. This is a manually loaded countertop system: you place and position the bag, close the lid and set the latch before starting extraction.

Its manual shows cutting roll material with scissors. Allow room beside the appliance for straight cuts, filling and keeping the open end clean. An included roll does not by itself establish an internal roll compartment or cutter.

FoodSaver lists an accessory hose with the machine and describes compatibility with the optional FA2000-000 handheld sealer. The accessory listing expressly limits that attachment to FM2000 and FM2100. It includes a hose and clip; it uses the countertop appliance for vacuum. Buying this attachment alone does not supply a cordless powered sealer.

This route suits a buyer who wants bag sealing now and has a specific compatible container or valve-bag job in mind. Check the actual package contents before adding a second hose or assuming the handheld attachment comes with the machine.

Handheld+: docked bag sealing and detachable vacuuming

The Handheld+ system combines a countertop heat sealer and a rechargeable handheld unit. FoodSaver describes compatibility with its bags, rolls and accessories, including Preserve & Marinate containers, jar sealers and bottle stoppers. The MS2000 manual describes the corresponding operating system.

For countertop vacuum-and-seal operation, the manual requires the handheld to remain docked. For a compatible valve bag or container, remove it and use its own vacuum control. It returns to the countertop dock for charging. Plan for an outlet and a properly seated handheld rather than treating the whole appliance as a battery-powered packing station.

The manual distinguishes its standard Zipper Bags, intended for pantry and refrigerator use, from Reusable Bags, which it also permits in the freezer and for sous vide. That distinction qualifies how you use compatible bags; broad compatibility wording does not give every bag the same temperature or cooking permissions.

Choose Handheld+ when you will use both workflows. A detachable unit adds charging and reservoir cleaning to the routine. Confirm the supplied bag labels and the matching manual instead of selecting solely by the starter-kit photograph.

Check headroom, seal condition and liquid handling

Both manuals call for at least 3 inches between bag contents and the open top, plus additional material for planned resealing. Leave enough clean, flat film for the channel and sealing strip. The FM2000 troubleshooting text has an inconsistent metric conversion for this allowance; its main directions and the MS2000 manual agree on the inch measurement.

Both call for 20 seconds between seals. That cooling interval is part of batch planning, not a promise of a finished bag at that frequency. Cutting, filling, cooling, checking the closure and returning food to cold storage also take time.

For FM2000 bag sealing, the manual says to freeze soup or stock solid before packaging. Do not draw free liquid into the appliance. Handheld+ also warns against sucking liquid into its handheld; stop and clean immediately if liquid enters the reservoir. A marinating function uses the specified container procedure, rather than permitting a bag of loose marinade at the sealing strip.

If extraction fails, inspect bag placement, the initial roll-end seal, gaskets and food debris. A wrinkle or contaminated sealing area can let air return. Follow model-specific troubleshooting instead of repeatedly heating the same damaged or dirty opening.

Use cold storage as part of the purchase plan

FDA recommends a refrigerator at or below 40 F and a freezer at 0 F. Packaging does not remove those requirements. Buy a sealer for portioning and storage quality alongside a cold-storage plan; it is not a way to make fresh food independent of refrigeration during an outage.

NCHFP describes room-temperature vacuum packaging as an option for thoroughly dried foods. That is distinct from canning, which includes the appropriate heat process. A jar attachment cannot turn fresh meat, moist vegetables or a cooked meal into shelf-stable canned food merely by pulling its lid down.

Choose the preservation method for the food before selecting its package. Follow food-specific preparation instructions. The FM2000 manual prohibits vacuum sealing soft cheese and fresh mushrooms, onions and garlic because of anaerobic bacterial risks. Avoid assigning a universal storage life from a freshness advertisement: the FM2000 manual itself says quality depends on the food condition when packed.

What to look for when you buy

FoodSaver FM2000 countertop vacuum sealer

Best for: Heat-seal bags and rolls with optional hose-connected accessories

FoodSaver documents separate seal-only and automatic vacuum-and-seal controls with a manually positioned bag and locking latch.

Watch out: Plan external cutting space and the required cooling pauses. The optional FA2000 handheld attachment is separate from the listed hose.

FoodSaver Handheld+ vacuum sealing system

Best for: A household using countertop bags and compatible valve accessories

The detachable cordless handheld vacuums supported bags and containers, then docks in the countertop machine for charging and bag vacuuming.

Watch out: The countertop heat-sealing operation needs power. Read the exact bag permissions, keep liquids out of the handheld and maintain its reservoir.

FoodSaver FA2000-000 handheld hose accessory

Best for: An existing FM2000 or FM2100 owner needing the supported valve attachment

The accessory page lists compatibility with those countertop models and includes its hose and storage clip.

Watch out: This is a hose-connected accessory, not a standalone rechargeable sealer. Match the actual appliance and vacuum accessory before ordering.

Questions people ask

How do I use a FoodSaver vacuum sealer with a roll?
First make the closed end with the Seal control. Fill the resulting bag, leave the manual-required clean opening, position it in the vacuum channel, latch and start vacuum-and-seal. Follow the exact model indicators, cooling interval and food-storage instructions.
Can FoodSaver vacuum seal Mason jars?
A compatible FoodSaver jar-sealer accessory provides a jar-packaging route. Follow its jar, lid and connection instructions. NCHFP limits the dry-storage method to thoroughly dried foods; the attachment does not replace canning or cold storage for perishables.
Can I use any Mylar bag in a FoodSaver?
These manuals recommend FoodSaver bags and rolls; they do not establish universal compatibility with Mylar packaging. Get approval for the exact film and machine from the manufacturer before relying on extraction or sealing. Matching a bag width alone is insufficient.
Do I need FA2000 if I buy Handheld+?
Handheld+ already includes its detachable handheld and documents accessory use through that unit. FA2000 is separately listed for FM2000 and FM2100. Match the actual system and accessory instructions instead of treating the attachment names as interchangeable.
